Day 1 -Food Journal

Because I love to experiment with food and try new things, dieting quickly becomes boring. And if you don’t have beaucoups of time to plan and be creative this is inevitability the demise of many. Fortunately, right now I do have lots of extra time as I job hunt and am enjoying the opportunity spend a purposeful hour on pinterest several times a week to find new, yummy things to eat.

“Fasting day” went well–Only minimal urges to gnaw off my left arm. Here is what I ate:

Breakfast- 140 calories

Hardboiled eggs

  • 2 hard boiled eggs
  • dash of paprika, salt and pepper

Lunch- 50 Calories

Miso soup (lots of sodium but so delicious and low cal!)


  • 2 packets of miso soup mix
  • 16 oz water

Afternoon Snack- Around 3:30/4:00 is when I start to feel hungry on fast days. So I had an almond and ate it very slowly 🙂

  • 1 Almond=7 calories

Dinner- 297 calories

Tortilla-less Chicken Fajitas


  • 6oz of chicken tenderloins
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 1/2 white onion
  • 1 TBSP Taco Bell Ranchero Sauce
  • garlic powder, cumin, cayenne pepper, salt and pepper (to taste)
  • splash of lime juice

Total Calories: 494

Weight loss: 2lbs
