We’re back!

After almost a year off of Atkins and 10lbs of weight gain, we have decided to rejoin the dieting world and get skinny again. We started on May 30th and decided to try the Induction phase this time. We have been using the menus but modified slightly for health reasons. Last time we were on Atkins, we were eating a lot of red meat and other high cholesterol items which were affecting blood pressure.

So, in hopes of avoiding the negative effects of all the meat eating, this week’s menu consisted mostly of fish and salad. I imagine we will eat some red meat but initially, we have bought mostly lean turkey, chicken and white fish. As we progress and move to phase 2, I will hopefully have more interesting posts for creative changes to the low carb items. For now, this will be a little more boring since we are eating things off the Induction menu.

Although it has only been 3 days, I am already craving something salty and crunchy so I will share this snack option we enjoyed tonight while watching the NBA playoffs. I will definitely limit consumption of these since they are full of salt but they hit the spot tonight.

Pepperoni Chips

6 ounces pepperoni, thinly sliced


Preheat the oven to 425 degrees F.

Lay the pepperoni slices in a single layer on a baking sheet and bake for 8 to 10 minutes.

Remove the pan from the oven and soak up the excess grease by pressing paper towels against the pepperoni chips. Return the pan to the oven and bake an additional 2 to 4 minutes, until the pepperoni slices are very crispy.

We had some artichoke dip from Sam in the fridge which went well with the pepperoni and really cut some of the saltiness.
