lamb

Posting again just because today’s dinner was so amazing! We adapted the recipe from an Atkins recipe but I was just too lazy to put them on skewers. We also left out the eggplant because last time, it didn’t do well on the grill.

One serving:

  • 5 Ounce-weights lamb chops
  • 1/2 onion, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch cubes
  • 2 Cups mixed greens

We added these ingredients to “marinate”: (it didn’t sit very long.)

Sorry there’s no measurements, just eyeball it:

  • a squirt of lemon juice
  • thyme
  • rosemary
  • salt
  • pepper
  • minced garlic
  • olive oil
marinated for 10 mins

A few suggestions:

  • make sure the cut of lamb is lean
  • the lamb was less chewy last time which I think was because it was cut into chunks and on skewers so it cooked more evenly
  • get a grill basket for the veggies if not using skewers
